Sales Manager

Job Description;

The Opportunity:

Glen Mhor Hotel and Apartments is currently recruiting for an experienced Hotel Sales Manager who will be responsible for developing the business within the local marketplace, develop further business for Corporate, Weddings and Conference. The successful candidate will be involved in account planning, proactive field & telesales sales, relationship building & local marketing. Key responsibilities are to drive local sales, corporate accommodation & meeting/wedding room business.

The Essential Skills:

  • Must possess previous hotel sales experience within the 3 and/or 4-star hotel sector
  • Have good experience of managing & developing strong relationships with key clients in the corporate, conference and leisure sectors
  • Have good experience about wedding and conference trade
  • Personal traits would include the following: possess a great personality whilst being genuine, approachable, attentive & instinctive. Must be smart and well presented & have the capability to remain calm when under pressure. The ideal candidate will have excellent sales knowledge, good IT experience and have excellent standards of numeracy & literacy.

Chef de Partie

RESPONSIBLE TO: Head Chef

Job Description:

To assist in the preparation and service of food for guests and staff
under the supervision of the Sous Chef/Head Chef.

Main duties:
– To prepare, cook and serve food delegated as your responsibility, ensuring that the highest possible quality is maintained and that agreed standards for food preparation and presentation are met at all times.
– Measuring dish ingredients and portion sizes accurately.
– Dealing with deliveries and stock rotation.
– To aid in achieving food cost, kitchen standard and overall objectives
– To carry out daily and weekly procedures, including temperature checks, food
labelling/dating and storage.
– To remove any hazards and make safe any defects in the kitchen or its equipment and report any problems to a senior chef.
– To keep high standards of personal hygiene and clean uniform.
– Ensure that all tasks are completed on each shift that a full and handover takes
place at the end of the shift.
– Ensure you have an understanding of all Hotel regulations.

Sous Chef

RESPONSIBLE TO: Head Chef

Job Description:

To assist the head chef in the day to day operation of the kitchen.

Main duties:
– To monitor and maintain consistent food standards and quality across all areas and during all stages of production and supply.
– To ensure quality control measures and hygiene systems are achieved at all times.
– To have total accountability for the day to day running of the kitchen service.
– To purchase all food and food related products using company suppliers.
– To actively participate in the ongoing management and development of menus.
– Weekly Stock takes of all kitchen supplies.
– Stock rotation and use by dates for the production of food are followed and food is
produced so not to contribute to wastage.
– To remove any hazards and make safe any defects in the kitchen or its equipment and report any problems to a senior chef.

– Ensure that all tasks are completed on each shift that a full and handover takes
place at the end of the shift.

Staff Management:
– To be responsible for the actions and lead all staff within the Kitchen.
– To ensure operational areas are properly prepared for all functions each day.
– To participate in the staff meetings
– Manage staff rotas, holidays and absences.
– To participate in the identification of training needs of all staff within line of responsibility on both an individual and group basis, including work methods, safety at work, health, hygiene and quality.
– To undertake staff briefing with all team members at the start of their working day.

Waiting / Bar Staff Full Time and Part Time

RESPONSIBLE TO:   Supervisor / F&B Manager

Job Description/Summary Greets customers and offers restaurant or cafe menus, answers questions about menu offerings, processes food and drink orders, carries food and drinks from kitchen to tables, and prepares bills and process payments.

Main duties:

  • Welcomes customers when they arrive at a restaurant, cafe, or other eating or drinking establishment
  • Introduces customers to the menu and announces daily or seasonal menu specials
  • Answers questions about menu items, ingredients, and pricing
  • Takes customers’ orders for food and drink by writing them on a ticket, entering them into a tablet, or memorizing them
  • Passes customer orders along to kitchen staff for preparation
  • Prepares drinks and serves them to customers
  • Collects food orders from the kitchen, verifies that they are correct, and serves them to customers
  • Ensures that customers are satisfied with their meals and processes orders for additional courses if necessary
  • Removes used dishes, glasses, and flatware from tables
  • Prepares cheques and delivers them to customers
  • Processes cash and credit card payments and returns change to customers if necessary
  • Sets tables with dishes, glasses, and flatware and refills condiments
  • Maintains familiarity with menu items, specials, and restaurant information
  • Meets with managers and wait staff daily or regularly in order to learn about menu changes and specials as well as discuss upcoming reservations and customers with special needs

Night Porter Full Time

RESPONSIBLE TO:   General Manager

Job Description/Summary:  To ensure that all guests receive a warm, memorable and personalised welcome to the Glen Mhor, setting the scene for their stay and ensure that guest needs are anticipated and that any requests are actioned.

Be responsible for the security of the hotel and its guests overnight and to set breakfast rooms and meeting rooms when required. As well as additional cleaning tasks.

Main duties:

  • Ensure that the service offered by all team members is personal and memorable. That guest

needs are anticipated and requests followed up. Build relationships with guests, ensuring that they want to return to the Glen Mhor.

  • Handle, follow up and communicate any comments or complaints. Pass on to relevant
  • HODs or Managers if unable to handle.
  • Ensure that all tasks are completed on each shift that a full and thorough handover takes

place at the end of the shift.

  • Ensure you have an understanding of all Hotel regulations.
  • Ensure all access to the hotel is secure as required by hotel policy and procedure.
  • Perform any related security duties as required overnight.
  • In conjunction with the Head Housekeeper, clean public area, carpets, with additional cleaning as and when required.
  • Check in late arrivals and check out early departures in line with hotel procedures.
  • Set up breakfast & rooms for meetings when required
  • Provide service in the Bar after the late shift team members have finished their shift.
